In 2021, we partnered with Maciek Kobielski of Magic Farms to grow fruits and vegetables exclusively for Eleven Madison Park.
Maciek grew these creamy and delicate Annina eggplants for our summer menu, and as a result of the season’s abundant harvest, we found ourselves with enough to use in this deeply flavorful spread.
Rich and warming, we make it by roasting the eggplants whole, and then stewing them slowly with tomatoes, Calabrian peppers, garlic, and fresh oregano.

We've been working on these items for a long time, and they've become an essential part of our everyday lives.
