Following my Japanese roots, I began making soups with Japanese miso, an ancient paste made from fermented soybeans which is packed with natural probiotics and enzymes. Instead of using fish for the dashi — a fundamental stock in Japanese cuisine that adds depth and savory flavor — I created the umami essence with wild seaweed and shiitake mushrooms.

This plant-based dashi is the foundation of TSUBI SOUP’s four flavors, each one featuring unique miso blends and original, gourmet vegetable toppings that are fully traceable from farm to fork.

The soups are then freeze-dried and compressed into cubes and are individually packed.

This makes them ultra-light, mess-free, and easy to grab on the go.

Freeze drying also helps to maintain the ingredients’ molecular structure and nutritional integrity.

Every cube is jam-packed with veggies, whose vibrant colors and textures magically come to life with a little hot water!
