This sansho peopercorn miso is so ver balanced- just like it’s unami soy sauce. No need to “fix” the proportion of miso with soy sauce here- just use it as it is- it is not too salty! The sansho peppercorn impart a mellow subtle floral smoky flavor to the miso and makes food taste like it’s been made from scratch!

You drive about 4 hours from Tokyo, his miso factory located near the beautiful landscape of Japanese Alps.
The land (especially their water) is truly nurtured by the climate of the Alps.
Having this enriched environment, his company has been passed down for generations since 1909 (110+ years) always thriving to innovate the miso making process.
